Weekend Breakfast: Smoked Salmon and Scrambled Eggs

See this social icon list in the original post

My favourite weekend breakfast choice has to be smoked salmon and scrambled eggs. I don’t usually have time to make eggs before work during the week, I usually go for porridge or a breakfast smoothie instead, however I make sure to allow time at the weekend to enjoy this healthy breakfast recipe.

Eggs are a nutritious superfood. I used to be of the school of thought that eating too many egg yolks a day could lead to cholesterol issues and even cardiovascular disease. Recent meta-analysis has however found that there is no link between egg consumption and the aforementioned diseases so you can enjoy the vitamin D, choline and other good stuff that yolks provide without any fear.

As for the smoked salmon, it's a great source of protein as well as vitamin D, magnesium and selenium. It also contains omega 3 fatty acids which help fight against depression and anxiety as well as improving eye health.

Check out the video to see what goes in to my Smoked Salmon and Scrambled Eggs healthy breakfast recipe:

Ingredients

75g Smoked Salmon

3 large eggs (scrambled)

1 x wholegrain bagel

Baby leaf spinach

Cherry tomatoes

Lemon wedge

Extra virgin olive oil or small avocado
